White Chocolate and Cranberry Cookies

Here comes the cookie monster…
150g butter
150g plain white flower
½ teaspoon of baking soda
50g ground almonds
50g oats
50g dried cranberries
100g light brown sugar
100g white chocolate chips
1 egg yoke


Melt butter; allow to cool a little while doing the following.

Sift flower and baking soda into a bowl. Add in the ground almonds, oats, dried cranberries, sugar and white chocolate chips. Stir together.

Add the egg yoke to the slightly cooled butter and whisk together and then add to the rest of the mixture and stir.

Make small golf-ball sizes of dough and place onto a tray, using a fork squash them down a bit.

Put in oven at 180°C for 8 – 10 minutes, or until golden brown. Place on a rack to cool.
