Fruit Madera Cake

Cake, my dear?
175g creamed butter
175g caster sugar
100g raisins / sultanas
225g plain flour
3 eggs
1 teaspoon baking powder
1 teaspoon mixed spices
2 tablespoons milk


Cream the butter in a bowl, add in sugar, then the eggs (one by one), add sultanas and stir in. Sieve in flower, baking powder, mixed spice and milk then mix everything together.

Use a 20cm round cake tin, butter around the edges and dust with flour. Add the cake mix to the tin and smooth down.

Heat the oven to 170ºC and bake cake for about 45 minutes until the centre of the cake is just firm.
