Chocolate Ice Cream

285mls Milk
75mls Cream
85g Caster Sugar
85g Dark Chocolate Chips
2 Eggs

Method

Bring the milk and the cream up to the boil. Take off the boil and add the chocolate chips and stir them until they all melt.

Break the 2 eggs into a bowl (both the whites and the yokes) and add sugar and whist for a couple of minutes until it’s slightly pail and creamy. At this stage, whisking all the time, add in the chocolate mixture. Put back into the saucepan on a low heat to cook slowly, stirring all the time, for 4 or 5 minutes until smooth and a little thicker – it should coat the back of a spoon, like a thin custard. Pour into a bowl and allow to cool, then put into the freezer.
